Eating vegetarian is as easy as 1, 2, 3.
Let’s talk about eating vegetarian for a hot second. Eating a plant based diet is not only good for your body, but its good for the environment too. Forks over knives is a great place to get information about everything on the topic. They do a great job explaining all the facets of a plant based diet, including the environmental impact it can have.
Here’s a excerpt from their site: ” In recent years, a multitude of studies have shown that the production of animal products (any food that comes from animal sources) is detrimental to the environment, causing significantly more freshwater pollution, deforestation, soil degradation, and greenhouse gas emissions than the production of plant foods. A new report published in the journal Science underscores these points and suggests that cutting meat and dairy from your diet might be the single best thing you can do for the planet.”
You read that right. The single best thing you can do for the planet.
Even if you don’t ever plan on cutting meat from your diet entirely, it can have a huge impact by just decreasing the amount you currently eat. You can think about introducing meatless Mondays into your routine!
So, since eating a plant based diet is important to me, I thought I’d share a recipe I like to eat so you can too! It’s super easy and 10 our of 10 on the yummy scale!
- Zucchini (Two large)
- Extra Virgin Olive Oil
- Sea Salt
- Vodka Sauce
- Pre-steamed lentils
- Cut zucchini into spirals and sprinkle with sea salt.
- Put spirals in a dish towel and ring out excess juice.
- Cook spirals in a pan with 1-2 TBSP of EVOO.
- Add lentils (I bought mine presteamed from Trader Joe’s) and stir.
- Cover with vodka sauce.
